Notion thief
This may have been answered already, but, If I have 2 notion thief in play, and an opponent would draw a second card in a turn, how will my second notion thief react to this?

I suspect you would draw 2 cards (1 for each instance of notion thief) for each card your opponent would draw but I'm not sure what happens to the trigger when the replacement effect fails. Maybe Epsilon will see this post, he'll give you the official Judge answer :)

Yeah, I tried looking through oracle, and then through the Comp rule book, but couldn't find an answer...

Mystical Teachings would allow you to tutor your key card (Notion Thief)

Notion Thief has a replacement effect that does not stack. One Notion Thief on the battlefield does the same thing as 4. The reason behind this is that the two replacement effects are fighting over only one card draw trigger, and only one replacement effect can have an effect on the gamestate per trigger.
