I started collecting right when the Innistrad expansions were coming out, and fell in love with Champion of the Parish. So, I built a deck around him. The sideboard is not a legit sideboard so much as a list of possible alternative cards I am considering.
I play the deck as fast as possible, going for an immediate beatdown rush. The only card in here over two mana is Ajani Goldmane. With how cheap and synergistic the creatures are, it's easy to create some pretty high combat values within a few turns. Pacifism, Bonds of Faith, and Gideon's Lawkeeper let me lock down dangerous critters who are too big to fight, and Brave the Elements is amazing at both sneaking in AND preventing the game-winning push. Ajani feels a little out of place, but he's what I had available. I'm strongly considering swapping him out for a Gideon Jura or two. So far, I've found that the most dangerous thing for me is creature removal; it sucks to watch my +5/+5 Champion get murdered by Doomblade.

ditch loyal cathar. add Thraben Doomsayer, he works perfect with champion of the parish. Grab some Preeminent Captains and then throw Crusader Of Odric in there. Now your not relying on Champ Of Parish for everything

i would trade out Loyal Cathar for War Priest of Thune (maybe) or Precinct Captain. Maybe throw in a Safe Passage. Might want to consider Mikaeus, the Lunarch he could help boost your 1/1's
