I can understand why people might choose Griselbrand over Jin but you're missing the important part, the Legendary creatures selected above are there to blow out your opponent in 1 turn. You empty their hand or draw cards for Jin and you Annihilate 6 with Emrakul. The rest of the deck and sideboard include returning things to their owners hand, drawing pieces to the Reanimates and discarding for the reanimates.

the reason why gris kicks ass is because he can immediately fill your hand for more reanimating antics. even if he gets removed you still get to draw your 7 cards, and basically ensure you get to go off again. oh he also has liflink, flying and is a bigger body than jin.
i dont think jin is bad in this deck, but gris is just better

using a 2-3 card combo to make your opponent discard his hand is not going to win you the game. and unless you used makeshift mannequin which is a whopping 4 mana, you have to sac him right away and get next to no use out of him.
