So the main idea is to create a sacrifice engine with the undying creatures, aristocrat, and any/all of the enchantments and/or blood artist.Any advice would be appreciated.
Use retribution of the ancients to remove the +1/+1 counters from the undying creatures to continue to use them as sacrifices so that blood artist can drain the enemy, aristocrat can survive and attack unblocked, you can draw cards, force opponents to sacrifice their creatures, and create an army of ever growing oozes.

Bone Splinters is another creature removal card that may work in this build.If you're aiming to be competitive, I'd add Torpor Orb and some darkblast, extirpate, and golgari charm to save against bombs.

I would suggest looking at Bloodghast, everytime you lay a land it can return to the battlefield, giving you something to sacrifice on most turns.Blade of the bloodchief would allow you to pump a creature with many +1/+1 counters.Also maybe look at viscera seer or Bloodflow Connoisseur, for other more productive things to sacrifice with.I am also looking at playing a similar concept. Another card besides gutter grime is ooze flux. Give that a search.
So, I have made a few tweaks using some of the cards suggested. Do you guys thing this would be worth putting together? Does it need more removal?
I think play test is the way to go now. You have a decent # of removal.
It all depends on what you mean by worth putting together. Could it be a decent deck and win a good number of games with your friends or FNM? It can do that. Do I think it could win you MTG regional tournaments, I doubt it, at least not without many hours of play testing. I think it looks like a fun deck to play with. Do I think it is $250+ dollars worth of fun? No.
